What are Chocolate Refiner Conches?
Chocolate refiner conches are essential for producing high-quality chocolate products. These machines grind ingredients into extremely fine particles, achieving a smooth and luxurious mouth texture.
Design and Functionality of the Conche
Each conche features a water jacketed tank lined with bars on the inside. At its core is a heavy-duty rotating shaft with grinding bars that work against the lining bars. These components are manufactured from manganese steel (mangalloy), known for its high impact strength and superior abrasion resistance in a work-hardened state.
The amount of pressure the griding bars exert on the lining bars is adjustable. Its this pressure that dictates how fine the chocolate ingredients are ground.
Conching Process and Particle Size
Upon loading ingredients and starting the conche, the grinding bars efficiently reduce particle sizes to microns, enhancing the chocolate’s smooth texture and luxurious mouthfeel. This fine particle size is a hallmark of premium chocolate, ensuring a uniform and velvety texture.
Homogenisation and Texture
Throughout the conching process, ingredients are thoroughly homogenised, resulting in a uniformly smooth and fine chocolate texture.
Automated Temperature Control
The conching process inevitably generates heat due to the friction created during the grinding process. To counteract this a cold water feed is plumbed into the machine. A solenoid valve opens once a set threshold has been reached allowing the water to regulate the temperature within the machine during the grinding process.
